When my husband and I were dating in college, he had an annoying health and fitness obsession (he still likes to live a healthy lifestyle, but at least it doesn’t consume his life anymore!). He collected every recipe from his Men’s Health magazines in a giant red binder. I used to think he was crazy, but I’ve actually found some awesome recipes in his stash! This is an adaptation of one of those recipes and by far our favorite! We get tons of compliments when we make it for people!

Cut the chicken breasts into strips. I mix the marinade ingredients and marinate the chicken overnight for better taste, but you can do it the day of just do at least 30 minutes.
Grill the chicken on medium heat for about 7 minutes a side. We put foil on our grill because the yogurt makes a mess, but it does taste really good when you cook it strait on the grill too! I like to chop the chicken in to bite-sized pieces after it’s grilled to fit in the pitas.
Mix the veggies in a large bowl. Squeeze the lemons for their juice and add olive oil. If you try to substitute bottled lemon juice it will not taste as great. Sometimes I use more or less lemon juice and olive oil depending on how many veggies I cut up. Then I mix in the chopped parsley and sprinkle with garlic salt to taste.
Spread tzatziki sauce or hummus (or both!) in your pitas. Add the chicken, veggies, chopped romaine, and feta and ENJOY!

- ▪ 3-4 chicken breasts

- ▪ 1.5 cups greek yogurt (enough to cover the chicken)
- ▪ 2 tablespoons miniced garlic
- ▪ 1 tablespoon cumin
- Veggie Mix
- ▪ 1 onion (diced)
- ▪ 4-5 tomatos (diced)
- ▪ 1 cucumber (diced)
- ▪ 1 green or red pepper (diced)
- ▪ 2-3 lemons (for fresh lemon juice)
- ▪ 2 tablespoons olive oil
- ▪ 1/4 cup fresh parsley (chopped; I've used dried parsley too)
- ▪ 1 teaspoon garlic salt (more or less for taste)
- ▪ 1 teaspoon ground Sumac (optional specialty seasoning)
- Other
- ▪ Chopped Romaine
- ▪ Crumbled Feta
- ▪ Tzatziki Sauce or Cucumber Greek Yogurt Dip
- ▪ Hummus
- ▪ Pitas
